The date stamp is embedded in the stream you capture ... you need software
that knows how to find it. Triggering display on your playback device has
no effect on the Firewire transfer ... the display function is a 'local'
effect that doesn't change the Firewire datastream, it simply overlays the
data on your display based on the abilities of your DV playback device.
All that said, I don't know of any software that will display the data on
the image area of your signal while on your HD. Programs like Scenalzyer
Live do 'read' the data, and will display the data beneath the preview
window. It will also name files based on the date/time data, and uses the
date/time data as the source for the ordinary Windows property data, which
can be useful in filing and sorting.
You will find that the date/time data survives the transfer to your HD, and
back again, if you trigger display of the data on a finished program tape.
