I was reading about Electrophoretic Displays (EPDs). In regards to
electronic ink, are they considered emissive or non-emissive?

electronic ink does not generate its own light source. It's just very
reflective.

Any insights?

Correct; electrophoretic types are reflective. An emissive
display by definition generates its own light. The LCD is
sort of a gray area - the LC cell itself is simply a light valve,
or light modulator, but when coupled with a backlight as LCDs
are most commonly used in notebook PCs, desktop monitors,
and TVs, LC displays are functionally emissive devices.

Other large-screen direct-view types (PDPs, FEDs, OLEDs,
EL, and of course the CRT) are definitely emissive technologies.
